Isn’t it amazing when you eat something that is so decadent and comforting and seemingly sinful and yet you know it’s actually fairly healthy? I had some almond milk in the refrigerator from previous recipe that I wanted to use up, and felt like baking
something yummy. This chocolate muffin recipe I found, thanks to Pinterest, is vegan with no butter or eggs or milk. It is lightly sweetened with a bit of applesauce and pure maple syrup. This combination along with the almond milk and coconut oil makes for an incredibly moist rich muffin. I substituted half a teaspoon of the vanilla extract with raspberry flavoring and the result was superb.
